If your are new to using wood chips on your grill here are the basics. Wood chips should smolder and not catch on fire. To do this you soak the chips in water for about an hour first. Then drain and place them in a smoker box or foil pouch (on a charcoal grill the can be thrown directly on the coals but the will burn quickly) and place them near the flame. In a few minutes they should begin to smolder, you will smell it if your hood is closed.

Different woods add different flavors. A good rule of thumb is the harder the wood the more over powering the flavor. With that in mid we recommend starting with hickory or apple wood. These are good middle of the road flavors that seem to work well on the widest variety of foods.
