The other day on a local news morning show one of the hosts was grilling up turkey ribs (video below). I had to ask what is a turkey rib? So as usual I scoured the net to figure it out.
This video is from Fox 8 Cleveland’s morning show featuring the so called turkey ribs.
As it turns out there are a couple of variations of this product available, both versions are nothing more than a turkey shoulder or scapula as it were. It appears as the more common version is a pre-formed pre-cooked piece of turkey white meat on the bone. These are supposed to be made specifically to give you the same texture as a pork rib.
This just seems to be an interesting way to get more money out of what would be a scrap cut of turkey meat. The second type is the same cut just uncooked. The only way to find these that I have found is in restaurant supply stores or online.
If you want to try something new you can try to do your own butchering. I have found the patented cutting process online here.

If you are looking to purchase them online (I found something that is NOT available at Amazon) they can be found here or here. I have also found bulk (20lb) boxes available locally at the Gordon Food Service Store, though they typically have to be special ordered.
